A Limerick to Savour the Flavours

There once was a curry so green,
With paneer cubes nestled between,
At our BnB’s hearth,
It gained all its worth,
The best Palak Paneer ever seen!

Ingredients (Serves 4):

  • Spinach: 1 kg (washed and chopped)
  • Cottage cheese (Paneer): ½ kg (cut into bite-sized cubes)
  • Tomato: 2-3 (roughly chopped)
  • Garlic: 2-3 cloves
  • Onion: 1 (medium-sized, diced)
  • Oil: 2 tablespoons (mustard or vegetable oil for authenticity)
  • Red chillies: ½ teaspoon (adjust to your spice tolerance)
  • Tomato puree: 2 tablespoons
  • Salt: To taste

Method

  1. Blanch the spinach
    • Add chopped spinach, tomatoes, onion, and garlic to a pot.
    • Cook for 10 minutes on medium heat, with no additional water. The vegetables release their own moisture, creating a rich base.
  2. Prepare the spinach paste
    • Once cooled, blend the boiled mixture into a smooth, vibrant green paste. This is the heart of your Palak Paneer.
  3. Cook the spinach base
    • Heat oil in a pan over medium flame. Add the spinach paste and cook for 10 minutes on high flame, stirring frequently.
  4. Add the finishing touches
    • Lower the heat and stir in paneer cubes, salt, tomato puree, and a splash of water to adjust the consistency.
    • Let it simmer for another 5 minutes on a low flame to allow the flavours to meld beautifully.
  5. Serve and enjoy
    • Pair your Palak Paneer with freshly made chapatis, naan, or steamed rice.
